Spring Cake Mix Cookies

We love all of the cake mix cookies, just like our patriotic cake mix cookies, and our pumpkin cake mix cookies, these are so simple and easy to make with just a few ingredients, including yellow cake mix. We added chocolate chips and pastel M&Ms to create this cute version of Spring Cake Mix Cookies, which are perfect for any time, but definitely give us all of the Easter vibes.

First, ingredients. I mentioned the yellow cake mix, but here’s the full list of what you need-

Spring Cake Mix Cookie Ingredients

• 1 (15 oz) box Yellow Cake Mix
• 2 eggs
• 1/2 cup vegetable oil
• 1/2 tsp vanilla 
• 1/2 cup Pastel M& M’s
• 1/2 cup chocolate chips

You can make these cake mix cookies right in one bowl, which really makes them one of our favorites. Less mess and less clean up! Here’s how to make them-

How to Make Spring Cake Mix Cookies

• In a medium mixing bowl combine the cake mix, eggs, and vegetable oil.
• Using a spatula or wooden spoon mix ingredients until batter forms.
• Stir in the vanilla.
• Fold in the M& M’s and Chocolate Chips until incorporated.

• Let the dough chill for about 10 minutes.
• Roll cookie dough into 2 inch dough balls and place on cookie sheet.
• Bake at 350 degrees for about 11-13 minutes until edges start to brown.

My kids really enjoy these kinds of cookies, and love that they are so easy to make, they can do pretty much the whole process themselves without a lot of help from me. I’ll definitely be adding more of our favorite cake mix cookie recipes, asap!
