Mini St. Patrick’s Day Brownie Trifle Cups
I’ve got another adorable St. Patrick’s Day treat for you today. This past weekend we put together these miniature St. Patrick’s Day Brownie Trifle Cups. They’re layered with brownie chunks, pudding, and whipped cream, then topped with festive lucky charms cereal and sprinkles! My boys thought that these were so much fun. They’re easy to make and assemble, your little ones can definitely help.
St. Patrick’s Day Brownie Trifle Cups
Here’s what you’ll need to make these.
- Boxed milk chocolate brownie mix, plus ingredients on the back of the box (eggs, oil)
- 1 oz. box of chocolate jello instant pudding
- 1 oz. box of cheesecake jello instant pudding
- 4 cups of milk
- green gel food coloring
- whipped cream for topping
- lucky charms cereal- about 1 cup of the marshmallows
- green sprinkles for topping
- 9 oz. solo dessert cups
These are so simple to make. You’ll start by making the brownies. You’ll want to follow the directions on your boxed brownie mix- I’ve made brownies from scratch and to be honest, you just can’t beat the simplicity or the delicious taste of boxed brownies.
Once those are cooked and cooled, you can break them into chunks so that they’re ready to go into our brownie trifle cups.
Next, you’ll mix up the chocolate pudding by whisking together 2 cups of milk and the chocolate pudding mix for about 2 minutes. I like to let mine set for just about 30-45 seconds, and to pour the pudding in at that point, because if you let it sit longer, sometimes it is a little thicker than we’d like it.
Start by adding the brownie chunks to your dessert cups.
I added about 4-5 chunks of brownie to the bottom of my cups, then divided the chocolate pudding evenly among 6 cups.
Next, I mixed up my cheesecake pudding. You could also use vanilla, white chocolate, or any other flavor you like that can easily be dyed green.
Add a few drops of green gel food coloring as your whisking up this pudding, let it sit again for 30-45 seconds, then spoon 2-3 spoonfuls into each cup for a nice green layer for the top.
Next, top with whipped cream.
Then, finish these cups off with some festive green sprinkles and the marshmallows from your Lucky Charms cereal.

Instructions
- Prepare the boxed brownie mix, according to directions.
- Once cooled, break brownies into chunks.
- Add 3-4 chunks of brownie to each dessert cup.
- Whisk together 2 cups of milk and chocolate pudding. Let it sit for about 30 seconds and divide evenly between the cups.
- Whisk together 2 cups of milk, cheesecake pudding, and 3-4 drops of green gel food coloring. Let it sit for about 30 seconds. Add 3-4 tbsp to each cup to form a nice layer of the green pudding.
- Top with whipped cream, festive green sprinkles, and Lucky Charms marshmallows on top. Enjoy!
