Pumpkin Cake Mix Cookies

I have a confession, I’ve recently become obsessed with making desserts out of cake mix- just like with my pumpkin whoopie pies, I love a recipe where I can just dump the cake mix in a bowl with a few extra ingredients and go for it. So, today we’re making pumpkin cake mix cookies with chocolate chips!

These turned out so amazing. My son tried them first and by the look on his face I could really tell they were going to be good. He is always my “bite taker” whenever I’m taking photos because he is usually right behind me ready to try whatever recipe I’m working on. These pumpkin cake mix cookies make a wonderful treat for Fall, and they’re so easy to make, with just 4 ingredients. Here’s what you’ll need-

What do you need to make pumpkin cake mix cookies?

  • 1 box of yellow cake mix
  • 1 15 oz. can of pumpkin puree (not pie filling)
  • 1 egg
  • 1 cup of chocolate chips

You DO NOT need any of the other ingredients on the back of the cake mix box- just these four things.

Traditionally in these cookies, you see them made with a spice cake mix. You can totally substitute the yellow cake mix for spice cake mix in this recipe if you really want to, but I feel like sometimes a lot of the spice in pumpkin spice can be a little overwhelming. One thing I loved about these was that they were light in flavor and not too overwhelming with the pumpkin aspect but with just enough to add that little something. I preferred using the yellow cake mix for these.

Also, for the chocolate chips you could use milk chocolate or white chocolate, I think they both would be delicious, and sometimes I feel like white chocolate compliments pumpkin so well. You could also omit the chocolate chips entirely, but I feel like that’s something I love about these is the soft fluffy cookies with the crunch of the chocolate chips in each bite. So good!

How to make the cookies

  1. Preheat oven to 350 degrees farenheit
  2. Line a baking sheet with parchment paper and set aside.
  3. In a large bowl, combine cake mix, pumpkin, and egg. Mix until dough forms and there are no more streaks of flour.
  4. Add in chocolate chips, and fold them into the dough.

5. Using a cookie scoop, scoop dough onto baking sheet, 2 inches apart.
6. Bake in a 350 degree oven for 12-14 minutes, until cookies are set and no longer look shiny.

There you have it- light, fluffy, pumpkin cookies filled with yummy chocolate chips.

How to save these cookies

I do recommend making sure these are done all the way, they do have egg, and if they are undercooked the texture will not be as nice when they are leftover. I also store mine in the fridge for 3-4 days, if they last that long. This recipe does make two dozen cookies.

Ingredients

  • 1 box of yellow cake mix
  • 1 egg
  • 1 {15 oz.} can of pumpkin puree
  • 1 cup of milk chocolate chips

Instructions

    1. Preheat your oven to 350 degrees farenheit.
    2. Line a cookie sheet with parchment paper and set aside.
    3. In a large bowl, combine cake mix, egg, and pumpkin.
    4. Mix until well combined and there are no streaks of flour.
    5. Fold in chocolate chips.
    6. Scoop by spoonfuls onto parchment paper, about 2 inches apart.
    7. Bake in a 350 degree oven for 12-14 minutes until cookies are cooked through and no longer shiny.
    8. Store leftovers in the refrigerator for 3-4 days.
