Blueberry Muffin Smoothie Bowl
We all know smoothies, but have you ever made a smoothie bowl? I love packing nutritional ingredients into these healthy bowls, and you can add even more great ingredients since you’ll eat this smoothie with a spoon! This recipe is for an amazing Blueberry Muffin Smoothie Bowl.
The pecan and granola give this a nice crunch, and of course, blueberries are the star of this bowl. Here’s what you’ll need to make it-
- 1 frozen ripe banana
- 1 cup frozen blueberries
- 1 (5.3 ounce) container vanilla Greek yogurt (or about 1/2 cup) -frozen
- 1/2 cup milk
- 1/4 cup steel cut oats
- 1/2 teaspoon cinnamon
And for the toppings, try-
- Fresh blueberries
- Fresh whole strawberries
- Whole pecans
- Granola
- Coconut flakes
To make this Blueberry Muffin Smoothie Bowl-
Combine all ingredients in a large blender or food processor.
Blend/process until smooth.
Pour into bowl, and top with toppings.
Serve cold, immediately.
*To make the smoothie bowl thick, more like soft serve ice cream consistency and easier to eat with a spoon, be sure to freeze the yogurt, as well.
*More toppings for your smoothie bowl include almonds or dried fruit, or other fresh fruits like cherries or kiwi.
*You can also sneak some healthy flax seed or chia seed into this recipe, as well.
*Makes 1 large smoothie bowl, or 2 small.
This bowl makes for a really great breakfast, or you can make a snack for you and a friend. My boys are also big fans of smoothie bowls, they think these are just ice cream’s fruity cousin, and they always dig in.
These are also quick and easy to make- you could prep your ingredients at the beginning of the week and freeze them up as smoothie bags. Don’t forget to create little topping bags as well, for a quick breakfast in the morning before school.
