Lemon Blueberry Cheesecake Parfait Ingredients

Graham Crackers– You’ll need 9 graham cracker sheets that we’ll crush for this recipe.

Granulated Sugar– for the crumb mixture and the blueberry sauce.

Melted Butter– for the graham cracker mixture.

Cream Cheese– softened cream cheese for the cheesecake mixture. We used full fat cream cheese.

Vanilla Greek Yogurt– this gives the cheesecake its tart flavor.

Powdered Sugar– for the sweetness in the cheesecake.

Vanilla Extract– for the cheesecake.

Fresh Lemon Juice– for the cheesecake & the blueberry mixture.

Heavy Cream– for the cheesecake.

Fresh Blueberries– for the homemade blueberry compote sauce.

Water– for the sauce.

Cornstarch– for the sauce.

You’ll need a few plastic cups, or smaller glasses or jars for serving these parfaits. Clear plastic solo cups or smaller mason jars are perfect.

How to make Lemon Blueberry Cheesecake Parfaits

Blitz the graham cracker sheets

Use a food processor (or a good old fashioned rolling pin) to reduce the crackers to crumbs. Add the 3 tbsp. sugar and melted butter, and pulse to combine.

Let’s make the Fresh Blueberry Filling

To make the homemade blueberry sauce, combine the blueberries, 1/3 cup sugar, 1 tbsp. lemon juice, water, and cornstarch. Heat this mixture to a boil in a medium saucepan, and simmer for 5-6 minutes.

Allow this mixture to cool completely before you continue, it will thicken a bit more as it cools.

Make the No-Bake Cheesecake Filling

To make the no-bake cheesecake, beat the cream cheese with a hand mixer or stand mixer, until smooth. Add the greek yogurt, powdered sugar, vanilla, 2 tbsp. lemon juice and the heavy cream. Mix the cream cheese mixture well to combine.

How to make the cheesecake parfaits

Layer the graham cracker crumb mixture, cheesecake mix, and blueberry sauce. Repeat the layers twice in each cup, to make 4 cups. We added about 2-3 tablespoons of the cheesecake, crumbs, and blueberry sauce for each layer.

Store these in airtight containers in the refrigerator, and chill in the fridge until ready to serve. I would serve these within a few hours. They are not the best make-ahead dessert.

Recipe Tips & Tricks-

Add a little lemon zest for extra lemon flavor. You can include this in the cheesecake mixture, or grate a bit on top of the parfait.

Make sure that your cream cheese is softened before you start to make your mixture. This way, it doesn’t turn out lumpy.

Substitutions & Variations-

You could also make this recipe with strawberries by simply swapping the blueberries for the same amount of strawberries.

You can skip the lemon juice to make this just a regular blueberry cheesecake parfait recipe.

These lemon blueberry cheesecake parfaits are the perfect no-bake Summer dessert.

Ingredients

  • 9 sheets of graham crackers
  • ⅓ cup + 3 tbsp. Granulated sugar, divided
  • ¼ cup melted butter
  • 8 ounces cream cheese
  • ½ cup vanilla greek yogurt
  • ¾ cup powdered sugar
  • 1 tsp. Vanilla extract
  • 3 tbsp. fresh Lemon juice, divided
  • 2 tbsp. Heavy cream
  • 1 pint fresh blueberries
  • ½ cup water
  • 1 tbsp. Cornstarch

Instructions

    1. In your food processor, blitz graham crackers to crumbs. Or, add the graham crackers to a gallon ziploc and crush with a rolling pin or something similar.
    2. Add 3 tbsp. sugar and melted butter, and mix to combine. Set aside.
    3. In a medium sauce pan, combine blueberries, ⅓ cup sugar, 1 tbsp. Lemon juice, water, and cornstarch.
    4. Heat to a boil, reduce the heat, and simmer for 5-6 minutes.
    5. Remove from the heat and allow the blueberry mixture to cool completely. You can speed this up by moving to the refrigerator, and stirring about every 5 minutes or so, until cool.
    6. To make the cheesecake filling, in a large mixing bowl, beat cream cheese, until smooth. Add greek yogurt, powdered sugar, vanilla, 2 tbsp. Lemon juice, and 2 tbsp. Heavy cream. Mix to combine well.
    7. To make the parfaits, layer graham crackers, cheesecake mixture, and blueberries with syrup, about 2-3 tbsp of each. If making 4 parfaits you can repeat these layers twice.
