Pumpkin Waffles with Maple Cream Cheese Icing

I am so excited to share today’s post with you! My husband and I collaborated on a really fun recipe. He woke up wanting waffles, and I was in the kitchen working on all things pumpkin, so we got the idea for Pumpkin Waffles! We both loved this maple cream cheese icing that I made for my Pumpkin cupcakes, and we agreed that no pumpkin waffle would be complete without it! So, I’m not sure if this is a dessert or a breakfast, to be totally honest. This icing is really blurring the lines. Either way, this is delicious! This recipe makes 7-8 large waffles!

Pumpkin Waffles with Maple Cream Cheese Icing

Here’s what you’ll need to make them-

2 1/2 cups all purpose flour
1 3/4 cup milk
1 cup pumpkin pie filling
1/2 cup vegetable oil
5 tbsp. butter, softened
2 tsp. white sugar
2 tsp. brown sugar
4 tsp. baking powder
1 tsp. vanilla extract
1/4 tsp. salt
1/4 tsp. cinnamon
A pinch of ground cloves
A pinch of nutmeg

I’m so amazed that he put this waffle recipe together and they came out perfect the first go.

To make the batter, you’ll want to whisk the eggs together in a large bowl. Then, mix in milk, vegetable oil, white sugar, brown sugar, baking powder, salt, vanilla, the softened butter, and the rest of the remaining spices with your mixer. Then, slowly mix in flour. Beat with the mixer in between each addition, and scrape the sides if needed.

Your batter will be a little lumpy- that’s okay!

My husband swears by his waffle method- first, he puts the batter into a measuring cup for easy pouring. He covers the “spokes” with batter, and let’s it cook for just a minute before he closes the waffle maker. He told me that this helps keep the batter from spilling out as much.

You’ll also have to cook these according to your waffle maker, but it took ours about 7-10 minutes on medium-high.

So perfect! We have become waffle masters.

Next, it’s time to mix up the icing.

You’ll need-
2 cups powdered sugar
1/2 cup butter, room temperature
8 oz. cream cheese, room temperature
4 tbsp. pure maple syrup
1/2 tsp. vanilla

Pumpkin Waffles with Maple Cream Cheese Icing

To make it, start by beating the butter and cream cheese (room temperature) until smooth and well combined. Add the vanilla and maple syrup, mix. Then, add half the powdered sugar, mix until combined, add the other half, and then mix again until icing is combined and smooth.

I used the smallest icing tip I had on hand and just did some squiggle lines with mine, you can get creative though, or just plop some icing on your waffle, or waffles. 😉

So yummy!! There you have it guys- your Thanksgiving breakfast (or dessert, you know, whichever) is planned. Trust me, you really want to make these waffles. They’re easy and so delicious, with just the perfect amount of pumpkin flavor. They aren’t too sweet which is what makes this icing so perfect, and I know maple syrup would be great, as well.   • 1/4 tsp. cinnamon
  • A pinch of ground cloves

  • 4 tbsp. pure maple syrup

Instructions
