Slow Cooker Buffalo Chicken Chili

You are going to love this Slow Cooker Buffalo Chicken Chili. It is a hearty chili that the whole family will love, perfect for game day, but also easy enough for a weeknight dinner! We are big buffalo wings fans in our house, but I was admittedly skeptical the first time I attempted this chili. However, it turned out so delicious! The buffalo wasn’t overpowering, and it had just enough spice. It is such a flavorful chili, and one of our favorite slow cooker recipes.

Slow Cooker Buffalo Chicken Chili

Slow-Cooker Buffalo Chicken Chili Ingredients:

  • 1 lb. ground chicken
  • 1 can of cannellini beans or white kidney beans
  • ½ can diced fire-roasted tomatoes
  • 3 cups chicken broth
  • ½ cup of buffalo sauce (We used Frank’s buffalo wing sauce)
  • 1 ½ cups frozen corn
  • 4 oz. can of diced green chilies
  • 2 tsp. Chili powder
  • 2 tsp. Ground cumin
  • 1 tsp. Garlic powder
  • ½ tsp onion powder
  • Half of a block of cream cheese (4 oz.)
  • ½ cup sour cream
  • Shredded cheddar cheese for topping
  • Blue cheese crumbles for topping
  • Green onions, sliced for chopping
  • Fresh cilantro for topping
  • Other toppings, as desired

Directions:

Step 1: Add the ground chicken to a skillet, and cook and chop until fully cooked.

Step 2: Add cooked ground chicken to your slow cooker.

Step 3: Add frozen corn, spices, tomatoes, chilis, and beans.

Step 4: Pour in chicken broth and buffalo wing sauce. Stir well.

Step 5: Cook on low for 4-6 hours or high for 2-3 hours. 30 minutes before the slow cooker is done, add in cream cheese and sour cream.

Step 6: Once cooking has finished, give everything a good stir. Cook a few minutes more if cream cheese still needs more time to melt.

Step 7: To serve, top with shredded cheese, blue cheese crumbles, green onions, cilantro, a dollop of sour cream, a drizzle of hot sauce, or anything else you’d like. Enjoy!

Slow Cooker Buffalo Chicken Chili

Substitutions:

Chicken– Want to use boneless skinless chicken breasts instead of ground chicken? Easy! Toss 2-3 chicken breasts into the crockpot in the beginning, reduce the chicken broth by 1 cup (you can add more throughout the cooking process if needed, but the chicken breast will give off some liquid), and add about 1 hour to your cook time, making sure to temp the breasts to check for doneness. At the end, remove them from the crock pot, shred, and add the shredded chicken back in.

Beans– You can use whatever beans you have on hand, really, that’s the beautiful thing about chili. Kidney beans, chili beans, and black beans are all great options for this recipe.

Spice– for a little added spice, add 1/2 tsp. crushed red pepper flakes. If you are really bold you can add 1 tsp!

Toppings– You can totally customize your toppings for this chili, and provide your family with a wide array of toppings to add to their own bowls. Some creamy avocado would be an excellent addition if you are an avocado lover!

Tips:

  • Serve this with tortilla chips or tortilla strips!
  • Make this recipe even easier by skipping the ground chicken, and opting for a pre-cooked rotisserie chicken. Shred it up and add it to the crockpot with the other ingredients!
  • You could also serve this chili over white rice for an even heartier meal.
  • For storing leftovers, let the chili cool to nearly room temperature, then store in an airtight container in the refrigerator. Enjoy within 3-4 days,
