Easy One Pot Lasagna Soup

I have a really delicious recipe to share with you today. This super easy one pot lasagna soup is perfect for busy week nights, especially with the cold weather this time of year. It makes a big batch of soup that will feed the whole family.

You just need a handful of ingredients to make this amazing soup, most of which you probably already have on hand. Here’s what you’ll need-

Easy One Pot Lasagna Soup

Ingredients-

1 lb. ground beef
½ medium yellow onion, diced
4 cloves of garlic, pressed
½ tsp crushed red pepper
24 oz. jar of pasta sauce
8 cups chicken broth
14 oz. can of crushed tomatoes
2 tbsp tomato paste
1 tbsp. Italian seasoning
2 tsp dried parsley
½ tsp salt
½ tsp pepper
1 bay leaf
10 uncooked lasagna noodles broken into 1-inch pieces
½ cup heavy cream
Shredded mozzarella cheese for garnish
Ricotta cheese for garnish
Fresh parsley for garnish

I love that this is all done right in one pot. Here’s how to make it-

In a large pot, brown ground beef over medium heat.
Once browned, add in onion, garlic, and crushed red pepper. Cook 2-3 minutes more, until onion begins to soften.
Drain the excess grease from the ground beef mixture.
Next, add pasta sauce, chicken broth, crushed tomatoes, tomato paste, seasonings, and uncooked lasagna noodles to the pot.
Bring soup to a boil, then simmer 20-25 minutes, until lasagna noodles are tender, stirring occasionally.
Once finished, discard bay leaf and stir in heavy cream.
Serve hot, garnished with shredded mozzarella, ricotta cheese, and fresh parsley.

The mozzarella and ricotta really set this soup off. This has got to be one of my favorite dinners I’ve ever made, and my husband and kids loved it, too. It definitely puts a fun twist on our usual spaghetti with meat sauce and cooks up so much faster than a regular lasagna.
