We are obsessed with this slow cooker loaded baked potato soup recipe when the weather starts to get cool. It is so delicious, and perfect for a cold day, a football game, a chilly night, etc.. This recipe is the perfect Fall comfort food, and it makes a huge batch of soup! Just a few ingredients, this is such a simple recipe you can cook up right inside your crock pot or slow cooker.

Slow Cooker Loaded Baked Potato Soup

I absolutely love this recipe. Creamy potato soup with chunks of potato, cheesy goodness, green onions, and crispy bacon on top! Here’s the full ingredients list-

Loaded Baked Potato Soup Ingredients

  • 4 cups russet potatoes, peeled and chopped into about 1/2-1 inch pieces
  • ½ cup onion, finely chopped
  • 4 cups chicken broth
  • ½ tbsp. Salt
  • ½ tbsp. Pepper
  • 4 tbsp. Butter
  • ¼ cup flour
  • 1 ½ cups heavy cream
  • 16 oz. bacon
  • Sour cream, for topping
  • Shredded cheese, for topping (we love either sharp cheddar cheese or a colby jack blend)
  • Fresh green onions, chopped, for topping
  • Any other baked potato type toppings you want to add to your soup!

I love crock pot meals so much because you can just dump in all the ingredients and walk away, essentially. For this recipe we do have to mix up some sauce at the end to thicken up our soup, and cook up some crispy bacon in the oven, but it is so worth it for the perfect loaded potato soup recipe. Here’s how to make it-

Slow Cooker Potato Soup Directions

1. In your crockpot, combine potatoes, onion, salt, pepper, and chicken broth.

2. Cook on low for 6 hours or high for 4 hours.

3. About an hour before cooking is finished, preheat your oven to 400 degrees. Then, take a potato masher and mash up the potatoes a bit inside the crockpot. Alternatively, you can mash them with a fork, or use an immersion blender if you have one.

4. Next, line a large baking sheet with parchment paper, and place your bacon slices onto the parchment paper. Bake for 20-22 minutes in a 400 degree oven, until bacon is cooked and crispy. Set aside to cool.

5. In a large skillet, melt butter over medium heat.

6. Sprinkle flour into the pan and whisk into the melted butter. Cook for 1-2 minutes.

7. Slowly whisk in heavy cream. Cook over medium-low heat until the mixture begins to thicken. Pour the mixture into your slow cooker, and stir well.

8. Finish cooking according to your original cook time for the crockpot.

9. To serve, top with chopped bacon pieces, a dollop of sour cream, shredded cheese, green onions, and any if your other favorite toppings. Enjoy your cheesy potato soup!
