St. Patrick’s Day Lime Poke Cake

If you love lime, you are going to be a huge fan of this St. Patrick’s Day Lime Poke Cake, and you might be, even if you don’t consider yourself a big lime fan, because these jello poke cakes are so delicious. They make for the best cakes, and that’s not even to mention our easy white chocolate cool whip frosting that we did on this one. I really wanted to make sure that the frosting complimented the lime, and when I asked google- what flavors go good with lime, they told me that white chocolate was it. So, you are definitely going to want to try this, it makes for the perfect dessert for St. Patrick’s Day that the whole family will love.

St. Patrick's Day Lime Poke Cake

Poke cake recipes are so much fun, and I love making them themed for the holidays. This lime jell-o poke cake has a great flavor, the sweet white cake mix, lime, and white chocolate frosting are a unique but delicious combination.

St. Patrick’s Day Poke Cake Ingredients:

  • 1 box of white cake mix, plus ingredients on the back (water, oil, egg whites)
  • 1 (3 oz.) box of Lime Jello
  • 2 cups water
  • 8 oz. cool whip
  • 1 (3 oz.) package of white chocolate instant pudding mix
  • St. Patrick’s Day sprinkles (or regular green sprinkles)
St. Patrick's Day Lime Poke Cake Ingredients

Directions:

Step 1: Spray a 9×13 inch pan with non-stick spray.

Step 2: In a large bowl, prepare cake according to package directions.

Step 3: Pour batter into the prepared pan.

Step 4: Once the cake has baked, allow it to cool.

Step 5: In a medium sauce pan, bring 1 cup of water to a boil.

Step 6: Remove from the heat and whisk in lime jello mix.

Step 7: Add 1 cup of cold water, and stir to combine.

Step 8: Poke holes all along the top of the cake with a large straw or the thin skinny handle of a wooden spoon.

Step 9: Pour the lime gelatin into the holes.

Step 10: Cover with plastic wrap or aluminum foil, and move the cake to the refrigerator to chill overnight.

Step 11: To frost, in a medium bowl, whisk together cool whip whipped topping and white chocolate pudding mix.

Step 12: Frost the cake, and sprinkle St. Patrick’s Day sprinkles over top.

Notes:

  • You could also top this cake with some thin lime slices and add to the lime flavor if you’d like, and skip the sprinkles. That way, you could serve it any time of year!
