Oven Baked Chicken Tacos

These oven baked chicken tacos are so delicious. They’re easy to make- you are going to use a store bought rotisserie chicken which makes this a super week-night friendly dinner idea. Be sure to bookmark these tacos or Pin them to your “Dinner Ideas” Pinterest board.

Oven Baked Chicken Tacos

You don’t need much to put these together- and you can customize them with your favorite taco toppings. Be sure to use the “stand n stuff” taco shells, or something similar, so that you can stand these up in your baking dish and melt that cheese. Otherwise you can use regular shells (even soft!) if you have one of these oven-friendly taco holders.

Here’s what I used-

  • Chicken pulled from one rotisserie chicken- about 2-3 cups, shredded
  • 6-8 Stand ‘n stuff taco shells
  • 1 packet original taco seasoning
  • 1/2 cup salsa
  • 1 can black beans
  • 2 cups fiesta cheese, shredded

This makes 6-8 tacos.

Some toppings to include- sour cream, tomatoes, lettuce, more salsa, taco sauce.. whatever you like!

Here’s how I made them-

  • Preheat your oven to 400 degrees.
  • Spray your 8×8 baking dish with non-stick spray.
  • In a large skillet, add chicken, taco seasoning, salsa, and 1/2 cup water.
  • Cook for a few minutes on medium heat, just to combine the ingredients and heat through.

  • Set your taco shells up, standing, in your baking dish.
  • Fill your tacos evenly with the chicken mixture.
  • Top with black beans and fiesta blend cheese.

  • Bake in the oven for 10-12 minutes until cheese is nice and melted.
  • Top with any additional toppings you like and enjoy!

These oven baked chicken tacos are amazing and my kids love them- even my 2 year old!

The rotisserie chicken makes these so easy to put together and delicious, too. My favorite rotisserie chickens come from Publix. You can buy them ahead of time and refrigerate them, too, or pull your chicken ahead of time and store it in the refrigerator in a gallon size bag.

These baggy racks are really handy for filling up your ziploc bags for food storage.
