Strawberry Lemonade Cake Mix Cookies

Cake mix cookies are so fun and easy to make. The boxed cake mix cookie recipe makes for some ultra soft, chewy cookies, and they are so easy, they only take a few simple ingredients. The strawberry cake mix and lemon cake mix are the perfect combination and make for a fun strawberry lemonade flavor. If you haven’t tried cake mix cookies before, you are going to love how they turn out!

Strawberry Lemonade Cake Mix Cookies

Cake Mix Strawberry Lemonade Cookies Ingredients:

  • 1 (15.25 oz.) box Lemon Cake Mix
  • 1 (15.25 oz.) box Strawberry Cake Mix
  • ⅔ cup vegetable oil, divided
  • 4 large eggs, divided
  • ½ cup powdered sugar

Directions:

Step 1: Preheat your oven to 375 degrees fahrenheit. Line a cookie sheet or baking sheet with parchment paper and set aside.

Step 2: In a large mixing bowl, mix together the box of lemon cake mix, ⅓ cup of vegetable oil, and 2 eggs. If dough becomes too thick, keep folding with a wooden spoon.

Step 3: In another bowl, mix together the box of strawberry cake mix, ⅓ cup vegetable oil, and 2 eggs.

Step 4: Using a 1.5 inch medium cookie scoop. Fill half of the scoop with lemon cookie dough and the other half with strawberry. Repeat, dropping the cookies onto the baking sheet, 2 inches apart. If it is easier, you can form a small lemon cookie dough ball and a small strawberry, and then roll them together.

Step 5: Move the cookies to the refrigerator for 20 minutes to chill.

Step 6: Before baking, roll each cookie slightly in your hands to smooth out the edges.

Step 7: Place dough ball back onto the baking sheet, and bake for 10 minutes.

Step 8: Allow the cookies to cool for 5 minutes on the baking sheet and finish cooling on a wire rack or whatever cooling rack you have.

Step 9: If desired, sift powdered sugar over top of the cookies.

You can store these in an airtight container at room temperature.

Tips & Suggestions:

  • You can have two toned cookies, or mix the doughs just a bit for more of a marbled ball of dough.
  • We dusted our cookies with powdered sugar, but you can also make up a delicious glaze made from powdered sugar, or even a sweet lemon glaze to top them with.
  • These are also a fun way to make themed pink lemonade cookies!
  • You can use any brand of cake mix you prefer! We love Betty Crocker, but Duncan Hines is great, too.
