  • 8 soft taco shells
  • 1 cup pico de gallo
  • 1 cup salsa
  • 2 cups of shredded lettuce
  • 2 cups shredded cheese

  • 1 lime, diced large

  • Black Beans
  • Cotija Cheese
  • Queso Fresco
  • Fresh Veggies (bell peppers, etc.)
  • Corn Salsa
  • Fresh Mexican Street Corn Salad
  • Fresh Salsa
  • Pinto Beans
  • Lime wedges for fresh lime juice

Note: You are going to want a big board for a Mexican food charcuterie board- there are so many toppings and combinations you’ll want a lot of space to work with.

Directions:

Step 1: To build your taco board, start with the items in bowls, we put our taco meat in the center of the board to build around and added our salsa and pico de gallo. It helps to start with larger items and work from there.

Step 2: Add taco shells, you don’t need to put them all at once, you can “refill” those if needed.

Step 3: The same goes for lettuce and cheese, fill that in next, but don’t feel like you need to add it all, they both make great fillers for the board as well.

Step 4: Finally, fill in all of the smaller ingredients around the board. I like to work from side to side and just find a space for each thing. Our limes were a great option to fill in blank space on each end.

Substitutions & Tips:

  • Skip the taco shells and tortillas and use tortilla chips for a fun way for everyone to make their own taco salads, or for a Mexican Nacho Board.
  • You can use flour tortillas or corn tortillas!
  • Change the meat- opt for spicy chicken tacos or carne asada, the possibilities are endless.
  • If you need to fill extra space on this board you can use tortilla chips!

How to Store this Taco Charcuterie Board

One you assemble, you can wrap the entire board in plastic wrap to store in the fridge, and just adjust the ingredients and make sure everything still looks good before you serve.
