This Potato Bites recipe is one of our favorite appetizers! It is so easy to make with just a few ingredients. Somewhere between potato chips and a baked potato, there are potato bites!

With a few potatoes and your favorite potato toppings, you can whip up some of these delicious cheesy bites. Here’s the full list of ingredients-

  • 4-5 russet potatoes- longer, skinner potatoes work best
  • 3 tbsp. Olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Shredded cheese, for topping
  • Sour cream, for topping
  • Pre-cooked bacon pieces, or bacon bits, for topping
  • Sliced green onions or fresh chives, for topping

Here’s how to make them-

Potato Bites Recipe Directions

Step 1: Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper, set aside.

Step 2: Wash and slice russet potatoes into thin, even slices. Toss the slices into a large bowl.

Step 3: Toss potato slices in olive oil and sprinkle with salt and pepper.

Step 4: Place potatoes in a single layer onto the parchment paper.

Step 5: Bake the potato slices in a 350 degree oven for 40 minutes, flipping halfway.

Step 6: Sprinkle a layer of shredded cheese to the potatoes, and return to the oven for 1-2 minutes, until cheese is melted.

Step 7: To the top of each potato, add a small dollop of sour cream, bacon pieces, or green onions- whatever you prefer. Enjoy!

Can I make these in the air fryer?

Talk about making this recipe even easier, I love any reason to not use the oven! However, the cook time on these is pretty long to get the potatoes cooked through. If you do them in the air fryer, thinner potato slices will be better, and you can’t overlap them or stack them. I would air fry them at 400 for 20 minutes and see how they are! It’s worth a shot.

How can I take these to the next level?

Want to really amp up your loaded potato bites? Start by using real, crispy bacon! Cook your bacon and chop it up. Then, the next way you can really make these good is by using a block of cheese and shredding it yourself. Shredded cheese has a coating on it that makes it not melt as beautifully as freshly shredded cheese does, so that is definitely a great option to make these even better.
